Here is a simple lunch I had the other day that was so delicious and easy to make.
Take a bagel and put cutup tomato slices on it and then top it with your favorite cheese. Mine is Cabot’s Seriously Sharp. Then put the bagel in the microwave until the cheese is melted. Or, you could put it in a toaster oven for a minute so the cheese melts and the top gets a little brown around the edges.
Next I have creamy cottage cheese, Daisy Brand, in a bowl and chunks of watermelon in another bowl.
Such an easy lunch to make and great for a hot summer afternoon.

Tonight Greg tried a recipe from the Martha Stewart Living magazine (July 2010), Raspberry Sorbet with fresh whipped cream. Oh my gosh was that delicious! It was smooth and creamy and full of flavor. It doesn’t have a lot of sugar so it is still a bit tart. You might want to add more if you like it sweeter. You don’t need an ice cream maker to make it and the raspberries can be fresh or frozen.
Ingredients:
- 1/4 cup water
- 1/4 cup plus 1 tablespoon sugar
- 1 bag (12 ounces) frozen raspberries or 3 cups fresh raspberries, frozen
- 1/2 cup heavy cream
Instructions:
- Stir together water and 1/4 cup of the sugar until the sugar dissolves.
- Pulse raspberries in a food processor until coarsely chopped. We don’t have a food processor so he used a regular blender to do this. You could also use a submersion blender if you have one.
- With machine running, pour in sugar-water; pulse until the mixture is smooth. Transfer to an airtight container, and freeze until firm, about 30 minutes.
- Whisk cream and remaining sugar until soft peaks form.
- Scoop sorbet into 4 glasses and top with whipped cream.

Have you tried the new M&Ms with pretzels inside? I got a free sample from their Facebook page about a month ago and now I’m hooked. The combination of sweet and salt is just right and I have a hard time not eating the entire 9.9 oz bag all at once.
